Lemon Coconut Muffins

I’ve got to be honest. I don’t love to scroll through a thousand pictures and many, many words to get to a recipe. So, I’m going to skip all that and hope that that’s ok with all of you reading! Skipping straight to this bomb.com recipe! ENJOY!!

*Preheat oven to 375

Dry ingredients:
1 1/2 cups flour
2 tsp baking powder
Pinch of salt
1/2 cup unsweetened shredded coconut
2 tbsp flax
4 tbsp hemp hearts. 

Wet ingredients:
3/4 cup canned coconut milk
Juice and zest of one lemon*
1/3 cup coconut oil
1/2 cup organic sugar (any sugar will do!)
1 tsp vanilla. 


Mix dry and wet together.
Spray muffin pan with non-stick spray.
Spoon muffin batter into muffin tins.
Top muffins with shredded coconut and a sprinkle of sugar.
Pop in oven @375 for 17-20 min.
BAM. Delish. Enjoy!

*Add that lemon juice and zest to the coconut milk and give it a little stir.
